Stefan Birmili , owner of the oldest running German Butchery ‘Rudis’ in Kirrawee Sydney has brought the taste of Europe to the Central West, having made the town of Orange on the central tablelands his family Home.
Cured has found a fantastic base to compliment this outstanding food and wine region... and has some of the most amazing salami's and sausages you'll taste.
We haven't had the opportunity to try out any of their workshops yet, that's on the 'must-do' list.
You'll find them at Shop 27 in the Orange Arcade. The entry to the arcade on Summer Street is right beside Scrumptious On Summer Cafe. The other easy landmark is Harris Farm. As you leave Harris Farm, after collecting your veg, meat cheese and fish... you turn left and there it is, just waiting for you to stop and taste and fill up the last remaining spaces in your bag with some stunning cured meats.
The only grip is they close at midday at Saturday - so you simply have to be up for morning coffee and supplies sometime before 11am. Not that hard really!?
